Anxi Tie Guan Yin, also called Iron Goddess of Mercy, is one of the best-known oolong teas from Fujian, China, often described as the "perfume among oolongs." Grown in the rocky soils of Anxi, this iconic cultivar is valued for its intense floral fragrance, vibrant green character and smooth, lingering finish – a must-stock item for any Chinese oolong range.

The tea is crafted with a light oxidation of around 15% and a gentle light roast, so the leaf's natural aromatics come through instead of being masked by heavy roasting. During processing, the fresh leaves undergo a traditional alternating shaking-and-resting technique that builds Tie Guan Yin's signature aroma and elegant body while preserving its vibrant emerald-green color. The dry leaf appears as vivid emerald-green rolled pearls that open into full leaves as they brew, producing a jade green liquor.
